Hard-Boiled Eggs


let eggs age 2 weeks (best to keep in refrigerator after 1 week)

Convince them into room temperature

pierce large end with a needle

put in saucepan 6 eggs, cover 1" with cold water and tablespoon of vinegar and cover

bring to rapid boil

take off heat and let sit covered for 17 minutes exactly

take eggs out and immerse into cold water for 2 minutes

return to boiling water for 10 seconds to loosen egg from shell

chill until cool

to peel, crack on all sides and then roll in hand
