Korma Indian Chicken
2 cans Korma simmer sauce from Trader Joes
2 pounds chicken thighs
6 oz mushrooms
1/2 sweet onion
4 pods garlic
Garlic salt to taste
Tbsp. soy sauce
Tbsp. chili oil (vary for hotness)
Cube chicken and fry in peanut or equivalent oil,
With garlic and onion, along with soy sauce, chili oil, and salt and pepper
Drain excess water and save for ice cubes
Add simmer sauce and mushrooms, simmer for 10 minutes or more.
Use on Basmati rice and especially okra fried in cornmeal!
